Seeking advice on assisting a student learning to use MatLab with VoiceOver

Hi - I am helping a student with no vision who is attending a University. The student wants to use MatLab with Voice Over on a MacBook and is looking for advice as she has never done it before. She is proficient on MacOS systems.
Hoping somebody can give help or advice or point us to somewhere.l

I don't use a Mac, but have used it on a PC with a screen reader. There should be an option for viewing the output as single line text as opposed to graphics. I don't remember what that option is now, but there is probably an *.INI file in which one can specify this upon startup.
