How do you remove Document Data of any application from your iPhone?

Phone Model: iPhone 5S
IOS 9.1

Go into settings; general; storage and iCloud usage.

Out there it would show you how much is used and available. You will also get a button that says manage storage. If you select that button, on the next screen you will get a list of apps. and the amount of storage memory they have used. You can further select the app. e.g. Youtube and it will show you the app. sise and the data and document storage sise.

I would like to know if there is any way if we could remove/ delete the data and document storage. The only option I have on that screen is to remove the app. I don't want to lose the app. and I want to understand what data and documents are actually being stored on memory. Apparently I heard from another fellow iPhone user that the more storage the slower your phone gets. Appreciate any suggestions/ responses to my post.

I was wondering the same thing a while ago. Not only about Documents and Data but that other category called Other. I was nearly out of icloud space but had only two apps selected for icloud backup and do not store photos or video on icloud. For me the problem was imessage conversations. My daughter sends me texts with photos and videos of my grandson. I was diligent about routinely deleting her conversations from my iPad but neglected to delete them from my Mini. Also the latest ios update, that I did not want, was taking up over one gigabyte. Thank you Betsy for your response. I will give the link you provided a read. I don't like the fact that you can't delete the default apps. by apple which you don't have any use for. This would give us more space on our phones. I am talking about apps. like News, Stocks, Tips, Watch etc.
