You can do mac to mac via macos 26 but, iphone controlling your mac, as far as I know this isn't possible, not in a accessible way at any rate, but I could be wrong.
I'm looking for exactly the same. Jump desktop used to be perfect. You install Jump Desktop Connect on the target machine, Jump Desktop on your device, such as an iPhone, log in on both with your apple ID and you're off to the races. Latency was pretty low, you could also use it with windows machines.
The issue is, it's recently stopped transmitting voiceover audio and I don't know why. Jump support weren't that helpful. I've tried reinstalling on several machines, but no joy.
I don't know if Apple has changed something about speech and how it is processed, but, that was the solution. Now, I don't know.
