Seems like it should be a really simple thing to do but I can’t figure it out, call Apple Support and they suggested top of container/bottom of container but that’s not quite it.
If anyone knows how to do this/what the gesture assignment is called please let me know

If you turn on VoiceOver help or go to VoiceOver practice, and then you perform a gesture, you'll hear exactly what it's called. You'll still have to find the category it's in, but you'll know what you're looking for.

Wasn't clear which way you're aiming. Top and bottom of screen appear to be two of those context related gestures that you are not allowed to assign on iOS. You can change first and last item to something else and it might work--I'm not fooling with my settings for anyone to find out--but you can not assign top and bottom of screen, multi-finger gestures to anything, as far as I can figure by going through many lists of available gestures to be assigned.
I know nothing of iOS coding etc, so I have no idea if it's a bug or oversight, or just too difficult to code changes on the fly for the gesture to work with anything you assign it to.

I use 2 finger swipe up for move to first item, and 4 finger single tap for move to last item. It works just fine.

That's good to have confirmed, Bruce Harrell. As I said, I'm not changing my command settings for anyone.
It would be nice, though, to be able to reassign the four-finger-single-tap-at-top-and-bottom to some other command, so as to not lose two gestures.

Yes I seem to have had trouble phrasing my question at the time. Thank you so much for your help everyone.
I guess this was my confusion that you cannot choose to reassign them both to a new gesture
Hope everyone's having a wonderful day

These two gestures are the only ones that are location-specific, or in other words, require you to tap a certain part of the screen. This is not the case for any of the other gestures. Four-finger tap near top and bottom are also the only two gestures that are not announced if you perform them with VoiceOver help enabled. Including these two gestures among those to which you can assign commands, would require a separate category for them, which does not exist as yet.
