Reading barrier-free PDF documents with Preview and VoiceOver?

Hello, after updating the operating system of my mac to Big Sur, I saw that the voice over began to read the barrier-free documents in the Adobe reader.
Is there such a possibility of reading using the "preview" of mac os?
Since the situation was much worse before than on Windows?
Or maybe there are some other programs for reading barrier-free PDF documents on a Mac?
