Any recommendations on accessible scanning software for the Mac?

I'm wondering if anyone has recommendations on accessible scanning apps for the Mac? I have been playing around with Prizmo but unless I have a setting misconfigured or something, I'm finding it hard to read documents fluidly because everything seems to appear in a table with each row being a separate paragraph or something. I realize that many people are just using their phones to scan these days, but I need relatively accurate scans of multi-page documents and still think a scanner is the easiest, most consistent way to get that done. I'd definitely appreciate any thoughts or suggestions anyone might have.
