Hello there,
I recently moved from an iPhone 8 to an iPhone 11 Pro, and one of the things that I found is that whenever I make or receive a call, and I hold the phone up to my ear, I accidentally seem to bepressing on the phone hard enough that VoiceOver is triggered, and I hear vibrations and that’s annoying Eric tone.
Is there any way to stop this?

A couple of suggestions
I have a couple of thoughts here. First of all, your new toy has a larger frame, so your ear might just be causing the speaker sensor to trigger from earpiece to handset, because you don't quite have your ear where it should be. A simple adjustment of your hand can confirm whether this is your problem or not.
You also mentioned that, when your call is being switched between speaker and headset, you feel a vibration. I'm thinking this is due to one of the haptics that your devices have. When they first came out, I had to play with them one at a time, in other words go turn it on or off, and then use my phone for a minute, to see what it did. The naming structure just isn't that clear in there. Perhaps there might be a thread here on this forum, to assist you in learning more about them than I did when it first dropped.
To change haptics, go to the following: Settings, accessibility, voiceover, audio, haptics.
This is where you will find the selections to make adjustments, and perhaps get rid of that vibration.

proximity sensor
I deal with this on my 13 pro max. Sometimes the proximity sensor won't trigger for one reason or another when you bring the phone to your ear. Usually pulling it away and repositioning it will do the trick. Sometimes I need to wipe the gunk off of the glass for it to work properly.
