If I am understanding you correctly, you can change this by going to the Settings section of the app, double tapping on the account you wish to update, and then double tapping on ‘edit login information’.

I'm wanting to change my display name on outgoing messages. I don't see that in Outlook. I can do it on the PC but I don't see how to do so in Outlook.

I have a gmail account. I believe I looked in the right place and didn't see how to change my name.

Interesting. I can change the display name for my IMAP accounts on that screen, but not for my iCloud account. From this, it appears that the option may only be available for some email account types.

Sorry for assuming that what I saw for my IMAP account would be the same for your Gmail account.

Settings/ Mail/ Accounts/ account name

I am assuming that you have your Gmail configured to outlook OR the mail app. either ways all the account information can be found under settings/ mail/ accounts; here is where you will find the list of accounts you have configured on your device. Tapping on the account name you can change the display name to your choice. Click done after you have made your changes. Let me know if that works. Please note; if you are using Outlook from Microsoft 360 you will not find account listed under mail. I have to figure out where to get that information, might be challenging as it has been set up by my company and I did not make any changes to it
