I have had similar experiences in the past and they often rectify themselves however, try pressing the home button or the side button depending on your phone three times to toggle voiceover on, and then go into accessibility on the voiceover and you should be able to fix the voice is there and then Siri in settings to fix your Siri voices.

In iOS 15.7 you could display message preview with voiceover on. After updating to 16.1 this no longer works
