iPad Air-Inconsistent Speak Language used -Eng/Fr/Sp/Ger

I have an iPad Air- now using iOS 11.2.2
With iOS 10, after I had selected a SINGLE WORD,- by swiping with my finger and then selecting Speak, it would give me the choice of two languages English or French. If I then selected English - for an English word (!) , it would give me a good audible pronunciation of this word.
This useful function has worked perfectly OK since I have had my iPad air - November 2013.

However since using iOS 11 (now 11.2.2) I DO NOT GET ANY LANGUAGE CHOICES.
SOMETIMES the pronunciation is correct- ie an English word is pronounced as it would be spoken .

BUT SOMETIMES IT WOULD BE PRONOUNCED AS IF IT WERE A FRENCH OR SPANISH WORD!!

If I swipe a complete phrase/sentence, it is more predictable.
Eg An English phrase would be CORRECTLY pronounced in English.
However, sometimes it is pronounced in Spanish, German or another language!

Has anyone else had this problem?
Any suggested fixes?

Yes, I have indeed had an hour appointment with an Apple representative, but without success.
Thanks to anyone who has any suggestions.
