have name of message sender and message contents hidden in notification shade

iOS and iPadOS

Hi, is there a way when you receive a text message to have the sender and message contents hidden in the notification shade?

Go to Settings->Notifications and turn off notification previews on the lock screen. I believe that's the only way. You can also customize the notification settings per app, so you could modify them just for the Messages app.
You could also disable VoiceOver's setting to automatically read incoming notifications, I think it's in its verbosity subcategory, but that would still leave them displayed visually when they appear.

I want the notification to just show new message or 3 new messages. I still want the sound to play when I receive messages I don't want the name and message contence to show on lock screen or notifications how do I do this?

You can. Just turn off notification previews for messages. You can still display notifications on lock screen but you'll get the result you want and the sound
